There is an indent in the bottom of the material that allows for the water to flow freely underneath. This is what efficiently traps the grease. The grease is caught by the baffle and left to accumulate for removal while the water and less bulky liquids are expelled with ease. A grease trap comes to malfunction and not perform its job properly when the baffle is missing, dislodged, or rotted out. A grease trap that has a missing or damaged baffle may still help to pump grease out, but it is not trapping the grease as its job is intended. A grease trap that cannot trap the grease has a defeated purpose! Some grease traps have more than one separation between sections, but the minimum is one separation.
