Long before the army eat them the slaves brought the cooking technique from Africa and it became a kind of soul food.
Now boiled peanuts have arrived in Southern California. James Wade, AKA Big Jim has revived this regional food and is taking the region by storm. Big Jim’s Peanuts is no accident. Jim Wade is a skilled and experienced restaurateur and food guru. He has run several eateries and is a Southern Food expert. Jim started this in his kitchen and is popping out peanuts on a regular basis now. It started as a way to bring a taste of the south to an otherwise boring food world. The innovation is not over, Big Jim’s Peanuts is also introducing deep fried peanuts. Deep Fried Peanuts seem to be a new and emerging food. There are a couple of places in the eastern US that does this, and out in the west… Only Big Jim’s Peanuts. We were delighted to help Big Jim with his farmer’s market gorilla marketing campaign. We provided the A frame and the Banner, but are looking forward to providing signs for the new world wide headquarters that undoubtedly be on the way as this food takes off. They fry everything is the deep south: Okra, Chicken, Candy bars and even pickles. Why not peanuts? You really need to try this southern delicacy. It is unique. The deep frying changes the shells and makes them eatable. They are transformed into golden, crispy, crunchy nuts. There are a range of seasonings that Big Jim is now experimenting with. The cooking is not as straight forward as you might think. The time, temperature, and the oil are all important and combine to create a unique taste. Also these peanuts are “green” and not the same peanuts you find in the store. "Green Peanuts" are only available in the Fall, when they are harvested. They get only slightly dry but still full of moisture and take only 45 min. to an hour of boiling to obtain peak taste. Unfortunately, it's impossible to get Green Peanuts in California in large quantities due to the fact that there are no Peanut Farms in California that actually grow peanuts. People from Alabama, North and South Carolina have know about boiled peanuts for years, but even these hard core southerners are just now learning about deep-fried peanuts.
